Chapter Four ~ A Little Farewell to Winter

Herb & Parmesan Lamb Meatballs with Tomato Sugo & Fresh Basil

As winter comes to a close, there’s still time for one more cosy meal around the table.

This is the kind of dinner we love ~ simple, comforting and made to be shared. Juicy lamb meatballs with herbs and parmesan, simmered in a rich tomato sugo and finished with fresh basil and a generous scattering of parmesan.

For this one, we’re reaching for our Farmhouse Haven Bowl ~ one of those pieces that feels made for cosy winter dinners. Its generous shape is beautiful for hearty, Italian-inspired dishes like meatballs, pastas and slow-cooked favourites. Place it straight in the middle of the table, add some crusty bread and let everyone help themselves.

Ingredients

For the meatballs

  • 500g lamb mince

  • 1/3 cup breadcrumbs

  • 1/4 cup grated parmesan

  • 1 egg

  • 2 cloves garlic, minced

  • 2 tbsp fresh parsley, chopped

  • 1 tbsp fresh mint, chopped

  • Zest of 1 lemon

  • Salt & pepper

  • 2 tbsp olive oil

For the tomato sugo

  • 1 tbsp olive oil

  • 1 small brown onion, finely diced

  • 2 cloves garlic, minced

  • 1 tin (400g) crushed tomatoes

  • 1 tbsp tomato paste

  • 1 tsp dried oregano

  • 1 tsp sugar

  • Salt & pepper

To serve

  • Fresh basil leaves

  • Extra parmesan

  • Crusty bread

Method

  1. In a bowl, combine the lamb mince, breadcrumbs, parmesan, egg, garlic, herbs, lemon zest, salt and pepper. Mix gently until combined, then roll into small meatballs.

  2. Heat the olive oil in a large frying pan over medium heat. Cook the meatballs in batches for 6–8 minutes until browned all over. Remove and set aside.

  3. In the same pan, heat the remaining olive oil and gently cook the onion until soft. Add the garlic and cook for another minute.

  4. Add the crushed tomatoes, tomato paste, oregano, sugar, salt and pepper. Stir and bring to a gentle simmer.

  5. Return the meatballs to the pan, cover and simmer for 20–25 minutes until cooked through and the sauce is rich.

  6. Spoon into your Farmhouse Haven Bowl and finish with fresh basil and a generous scattering of parmesan.
